The Cantabrian sea is a littoral part of the Atlantic Ocean located in the northern coastline of Spain and in the South-west French shoreline. Being the Cantabrian sea located between the cold streams of the North and the temperate Azorean ones, it is a sea plenty of sea-plants and animal species. Among its flagship products, there are anchovies, which are much meatier and larger than ones from the Mediterranean sea, due to the colder waters. As a matter of fact, their constant movement results in a firm and flavourful flesh. Additionally, they undergo a minimum 45-day aging process to enhance their organoleptic qualities.

Fishing method: fished with purse seine and collection nets.
